Maple Baked Acorn Squash

DSCN8106Teri’s favorite Winter squash is Acorn squash and this is one easy, delicious way to prepare it!  I don’t think we even need a recipe for this, I’ll just walk you through it…Wash one acorn squash and carefully cut in half along a center ridge.  Scoop out all the seeds and strings.  Place cut side down on a cutting board and cut into 1-1/2 inch half-rings.  Arrange these in a lightly buttered baking dish and dot with butter as you arrange.  Sprinkle all over with about 2 teaspoons Raggedy Hen Farm Baking Spice Blend (or your favorite combination of cinnamon, nutmeg, cloves, etc.), a pinch of salt, and then drizzle 1/4 cup organic, real maple syrup over the whole thing.  Cover loosely with foil and bake in a 350 degree oven until done (approximately 20-30 minutes, depending on how much you’re cooking.)  That’s it!  So yummy and this makes a perfect side dish!
